Uncle Louise's Marvelous Mocha Frosting


Ingredients

1/2 C butter
1 Egg yolk
1 lb. powdered sugar [4 cups]
1/4 Tsp salt
2-4 T strong brewed coffee [depending on your taste]
6 T powdered cocoa
1/2 Tsp vanilla

Directions

Cream butter until light.

Add egg and beat until smooth.

Slowly blend in sugar, salt, cocoa, alternating dry ingredients with coffee. Beat until smooth, adding enough coffee for easy spreading.

This frosting is delicious with white, yellow or chocolate cake and is a treat for coffee and chocolate lovers alike! The other night we celebrated a birthday, so I made Uncle Louise's (as our two-year-old Jennifer used to call her... Her husband was "Aunt Walter"!) frosting for my cake. This treat was scarfed up in one sitting by grateful summer cottagers! Make sure you check out the cake recipe that "Uncle Louise" used!
