Blueberry Pie


Ingredients

1 C sour cream
1 C sugar
1/3 C flour
1/2 Tsp salt
3 C blueberries

Directions

Stir together sour cream, sugar, flour, and salt. Add blueberries and mix well.

Put mixture in thin pie shell.

Bake at 450 degrees for 10 minutes. Turn oven down to 375 degrees and bake till bubbly.

Blueberries are rich in antioxidants and vitamins. Treat yourself to some blueberry pie while these berries are in season. This recipe even tastes great without the pie shell. Just bake in a greased pan!

My daughter Jennifer whips out three of these pies at a time. Her secret for freezing fresh blueberries in summer is to wash them and leave them in a colander to dry. Then, bag them up in exact amounts for one pie and freeze. To freeze fresh blueberries for pancakes or JELL-O© salad, wash the berries, dry them on paper towel, and place them on a cookie sheet in the freezer to freeze them individually. Then, place them in freezer bags and freeze. This particular recipe is from Udi Wenk in Chelsea, MI. Her husband, Lorenz, would mail me shelled hickory nuts, which he found and shelled himself every fall. What extravagance!
