Peanut Butter Bars


3 C brown sugar
3 lbs. powdered sugar
2 C melted butter
8 C peanut butter
4 Tsp vanilla

For frosting:
1/2 lb butter
48 oz. chocolate chips


Mix first five ingredients, and then press onto greased pan. (The pan size needed depends on a full or partial batch. I use a big cookie sheet with raised sides [about 9x13] for the full batch.)

Melt the last two ingredients in the microwave. Pour over peanut butter mixture. Cut before it cools.

(Note: These cookies do not need to be baked and should be stored in the refrigerator.)

I got this recipe from Robyn at Creative Expressions Deli in Onekama, MI, before they closed and deprived us of the most wonderful sandwiches and wraps this side of New York! It's a huge batch, as you can tell, so you'll be popular with all your kids' friends and have enough to wrap up in something pretty for the neighbor who needs a pick-me-up. Of course, you can cut the recipe in half or quarter it.
