Tzatziki


Ingredients

About 2 cups Italian ("burpless") cucumbers, roughly grated
Fresh garlic clove(s), pressed (to taste)
A dash of white pepper (to taste)
About 1/4 cup plain yogurt
About 1/4 cup sour cream
A bit of olive oil

Directions

Blend all ingredients. Chill before serving.

You'll want to make sure the cucumber is completely covered, so the amount of yogurt and sour cream can be increased as needed, in equal portions of each ingredient.

Serve alongside sandwiches or wraps.

In the Greek port of Loutro on the southern and western side of Crete, I met a woman who was willing to talk "woman-to-woman" through a bit of English and a bit of Greek. She shared this recipe for her favorite Greek summer condiment/salad. I serve it out on the patio with gyro-type wraps and provide a bowl for adding whatever looks good with the meal.
