Mom's Mint Punch


Ingredients

5 Lemons
4 Oranges
1 Small grapefruit
1 Scant cup pineapple juice
2 C sugar
1 Q water
Double handful fresh mint

Directions

Squeeze lemons, oranges, and grapefruit. Put juice and rinds in large container. Add pineapple juice.

Bring sugar, water, and mint to a boil to create a sugar syrup. Pour the hot liquid over the juice and the rinds, and let the mixture cool.

Squeeze out the rinds and discard.

Add enough water to make one gallon. Refrigerate.

Serve over ice for a refreshing summer drink. Stick a sprig of fresh mint from the garden or market into the glass for the full effect!

If you like the flavor of fresh mint, you'll love this refreshing spring/summer drink. I've even frozen it in small amounts and served it kind of slushy with hors d'oeuvres or afternoon nibbles. It's quite tasty with crackers, cheese and a few crunchy nuts.
