Jim Taggart's Ham Loaf

Ingredients
1 lb ground pork 1 lb ground ham 1/2 cup brown sugar 3 tablespoons prepared mustard 1/2 cup bread cubes 1 egg
Topping: 1 cup Red Currant Jelly 1/4 cup yellow mustard Directions
Mix all ingredients and shape into a loaf pan. Melt 1 cup Red Currant Jelly with 1/4 cup yellow mustard in pan and pour over meatloaf. Bake 1 hour at 350°. Serve this rich dish with your favorite potatoes, simple vegetables and a salad. My husband's cousin, Jim, loved to cook, indoors and out. His wife taught school, so he got high marks when supper was ready by the time she got home! As a new bride, I picked up on his secret of rubbing fresh garlic on a steak, followed by fresh squeezed lime juice, and then grilling it. Here's another of his recipes for any time of year!
