Debbie's "Peace of Mind" Salad

Ingredients
8 cups chicken stock 4 cups water 1 lb orzo 3/4 to 1 cup EVO [Extra Virgin Olive Oil], divided 4 cups spinach leaves, washed 1 1/2 cup sundried tomatoes Shredded cooked chicken [optional] 1 bunch green onions, sliced 1/2 cup thin snipped basil 1/2 cup pine nuts, toasted 8 oz Feta cheese Juice of 1 lemon salt and pepper 1/2 cup sliced Kalamata olives
Directions
Boil broth & water together Add orzo & chicken, if you choose that option Cook according to orzo directions Mix with all other ingredients & dress with 1/4 cup olive oil, which you've mixed with lemon juice. If too dry, add remaining 1/2 cup olive oil Add salt and pepper. Toss lightly & well. Refrigerate 2 hrs. Serve cold or at room temperature or even heated.
I was handed a bowl of this delightful salad when, after watching my daughter's kids, she sent it home for our supper. It's a nice "payback" feeling when Hannah does that! She said it was Debbie Holley's recipe, so I thought "delicious," based on the raves from Hannah's husband who goes to a men's Bible study at Holley's house. Debbie serves the guys dinner!
