Sweet Sour Navy Bean Salad

from Dorothy Zehnder, who with her daughter, Judy Zehnder Keller (both seen below) owns and operates The Bavarian Inn and Lodge in Frankenmuth, MI.


Ingredients

1 pound (2 cups) Michigan Navy Beans
1 1/4 cups celery, diced
1/2 cup onion, chopped
1/2 cup green pepper, chopped
1/2 cup vinegar
1/2 cup Italian dressing, (or any oil and vinegar dressing)
1/2 cup sugar
1 teaspoon dry mustard
1/2 teaspoon garlic salt
1/4 teaspoon paprika
3/4 teaspoon Frankenmuth All Purpose Seasoning (or other all purpose seasoning)
1/2 teaspoon salt
1/4 cup diced pimientos

Directions

Soak beans in 6 cups of water for up to 8 hours (or overnight in the refrigerator). Drain and rinse. Combine with 6 cups fresh water and simmer for 1 to 1 1/2 hours or until tender. Drain, cool, then add remaining ingredients. Chill in refrigerator about 4 hours before serving.
Serves 10-12
