German Potato Salad


Ingredients

10 Medium potatoes
1 Medium onion
4 Slices good bacon
2 Eggs, slightly beaten
3/4 to 1 C sugar
1/2 C cider vinegar
Salt, pepper, and celery to taste

Directions

Cook the potatoes in jackets, then skin and slice them.

Finely cut the onion and add to potatoes.

Add salt, pepper, and celery to taste.

Cut the bacon into small pieces and fry until crisp. Let cool a few minutes.

Add eggs, sugar, and cider vinegar into the bacon mixture.

Cook the bacon, egg, sugar, and vinegar mixture for one minute. If the mixture is too thick, add a small amount of water. Pour this cooked mixture over the sliced potatoes and onion.

Serve and watch people smile, relax, and politely ask for more!

This is the recipe the moms make for the Holy Cross Lutheran School Picnic in Collinsville, IL, every year. It's nice comfort food for the fall, winter, spring, and summer! Serve it with meat, veggies, and bread.
