Cucumber Sandwiches


2 Cucumbers, peeled and sliced thin
2 Crushed garlic cloves
1 Tbsp soy sauce
1 Tsp salt
2 Dashes Tabasco
Cider vinegar
Whole-wheat or white bread


Place cucumber slices in a medium-sized jar or container. Add crushed garlic, soy sauce, salt, Tabasco, and enough vinegar to fill the jar. Chill for at least 12 hours and drain cucumbers.

Spread 12 thin slices of bread with mayonnaise and arrange cucumber slices on each. Place another piece of bread on each sandwich and top again with mayonnaise and cucumber slices. Place another piece of bread on each sandwich, and cut each sandwich diagonally into 4 triangles.

For presentation, sometimes I cut the crusts off and place watercress or snips of fresh parsley on top of each triangle. The brine keeps for several weeks, so you can keep it in the fridge if you want to make this treat again.

These summer sandwiches are for adult palates but so nice and refreshing on a hot afternoon as a snack with friends. Add a beverage of your choice and a little fresh fruit, and you're ready for a party!
