Pralines


Ingredients

1 lb brown sugar
1/2 pint whipping cream
2 C pecans, whole or slightly chopped
2 T butter
Dash vanilla
Dash salt

Directions

Microwave brown sugar and whipping cream on HIGH for 13 minutes in 4 qt Pyrex bowl. (In heavy crockery bowl, you may have to adjust the time.) Remove from microwave and add pecans, butter, vanilla, and salt. Beat for 30 to 60 seconds until you notice a slight thickening in the feel and appearance. Pour out onto buttered foil in large or small round pieces. If it begins to harden, return bowl to microwave and heat until it softens.
