Poppy Seed Bread



Ingredients

Bread Ingredients:
3 cups flour
2 cups sugar
1 teaspoon salt
1 1/2 teaspoons baking powder
1 1/2 cups milk
1 1/4 cups oil
3 eggs
2 teaspoons poppy seeds
2 teaspoons vanilla extract
2 teaspoons almond extract or flavoring

Topping Ingredients:
2 teaspoons margarine
3/4 cup sugar
1/4 cup orange juice
1/2 teaspoon vanilla extract
1/2 teaspoon almond flavoring

Directions

Preheat oven to 350 F. Sift together flour, sugar, salt and baking powder in a bowl. Add remaining ingredients. Beat 2 minutes. Pour into greased baking pans**. Bake at 350 degrees for about one hour. The top will be nicely browned and an inserted knife should come out clean.

Put all topping ingredients in a 2-quart measuring cup and heat in the microwave until melted. (This takes about 2-3 minutes.) Poke holes in bread with fork. Pour topping over bread while bread it's hot.

** Approximate yield: Two 9-inch loaf pans or 4-6 mini-loaf pans or 24 muffins.


Dress up your table by using small loaf pans and placing a loaf at each person's table setting. This bread is also perfect as a gift for a neighbor or friend to enjoy. Just wrap it in foil or clear wrap and tie with a festive ribbon. (Note: I keep the bread in the refrigerator after the first day.)
