Christ is risen! He is risen indeed! I've heard those words at Easter since before I was born, but it would be a long time before I understood what they meant. In fact, the Easter "draw" for me as a kid was the Easter egg hunt and the candies, especially the chocolate bunny wrapped with a bright yellow ribbon. My mom would put our chocolate rabbits on top of the refrigerator and break off an ear or a nose, just the right size -- she thought -- to satisfy me without putting me into sugar shock. Strangely enough, that chocolate rabbit was gone before I knew it, and I gradually realized I was not the only one eating my rabbit!

Frankly, I was a little surprised when a young woman asked for a private audience with me at the convention I keynoted. But out of 1,000 attendees, her story impressed me more than if all of them had thrown dollar bills in the air. Settled into her chair, out came a gripping account of what I call The one that got away. She quietly described growing up with a mom who was active as a Lutheran Christian and a dad who was not. She attended the Lutheran church until leaving home to study engineering at a university where the academic pull won out over the Christian persuasion. She only attended church when she was home. Sound familiar?

In one of her books, Corrie tenBoom tells of some Christian friends who wronged her in a public and malicious way. For a while she was bitter and angry until she forgave them. But in the night she would wake up thinking about what they had done and get angry all over again. The memory would not go away.

Now that my husband and I are back to 2, I've returned to my first-ever cookbook as a young bride! It's the old Betty Crocker's "New Dinner for Two!" It's fun remembering how my boldness increased through the pages of that book! Here's my variation of an oldie but goodie that's gracing our table once again.
